Ingredients for the Pastry Dough for Mooncakes
First we will make the outer pastry dough. Here are the ingredients you will need:
•1/3 cup golden syrup
•3 tablespoons peanut oil
•1 cup cake flour
•1/2 teaspoon baking soda
•1 pinch salt

Instructions for Making Pastry Dough for Mooncakes
To make the dough, whisk together the cake flour, baking soda, and salt in a mixing bowl. Stir in the golden syrup and the peanut oil, mix until a smooth dough forms. Wrap with plastic wrap; refrigerate at least 4 hours.

Filling for Mooncakes
Now we will make the Mooncake filling.
•The main ingredient is the Adzuki Bean, they are a small round red bean with a small white stripe, you will need 1 1/2 cups dry adzuki beans.
•4 cups water
•1/4 cup peanut oil
•1/4 cup white sugar, or more to taste
•1 tablespoons wheat starch
•1/2 cup all-purpose flour
•1 egg yolk, beaten

Making the Mooncakes
Now in a large pot on high heat combine the adzuki beans and 4 cups of water and bring to a boil, reduce heat to medium low, cover, and simmer until the beans are tender, about 1 hour. Drain the beans and allow to cool for 10 minutes. Puree the cool beans in a blender or food processor.In a sauté pan over medium heat add 1/4 cup of peanut oil. Stir in the pureed beans along with the white sugar. Cook and stir until the bean paste clings to the stirring spoon, 10 to 20 minutes. Stir in the wheat starch. Pour into a mixing bowl, cover and chill in the refrigerator until cold.

Preheat oven to 375 degrees F, and place parchment paper on a baking sheet.Remove the cold dough and the chilled filling from the refrigerator.Divide the dough and the Adzuki sweet bean filling, each into 8 portions and roll into balls. Press the dough balls between your palms to form circles large enough to envelop a a sweet bean filling ball. You can use a rolling pin to help make the dough flatPlace a filling ball onto the center of each pastry circle, wrap the pastry around the filling, and pinch the edges together. Now place these into a muffin pan to make the perfect round shaped Mooncakes. Then dump the formed cakes out onto a clean surface.

Dredge the mooncakes in the all-purpose flour to coat; shake off excess. Place the Mooncakes on the prepared baking sheet lined with parchment paper.Bake in the preheated oven for 8 minutes. Remove the mooncakes from the oven and reduce the oven temperature to 300 degrees F Brush the Mooncakes with the beaten egg yolk, applying more of the yolk to the tops than to the sides. Return to the oven and bake until golden brown, about 15 minutes more. Cool completely before serving.These are a unique sweet treat that represent celebration, and will impress your friends and family and even business clients.
